Oranges in Syrup is a traditional British recipe for a classic desert of oranges in a coffee and pistachio nut syrup served with yoghurt. The full recipe is presented here and I hope you enjoy this classic British version of: Oranges in Syrup.
Finely-pare the zest from 1 orange (use a potato peeler) then shred the zest finely. Peel the remaining oranges and cut each crossways into slices. When done, re-form the oranges from the slices and secure with cocktail sticks.
Put the sugar in a heavy-based pan and add 50ml (1/5 cup) water. Heat gently until the sugar dissolves then bring to a boil and cook until the syrup turns a pale golden brown.
Take off the heat and carefully pour 100ml (3 1/2 tbsp) boiling water into the pan. Return to the heat and cook until the water has dissolved into the syrup then stir in the coffee.
Add the oranges and the shredded zest to the coffee syrup. Bring to a simmer and cook for about 18 minutes, turning the oranges once half way through the cooking process.
Take off the heat and set aside to chill.
Beat the Greek yoghurt until smooth then stir in the cinnamon and nutmeg. Serve the oranges garnished with the pistachio nuts and accompanied by the spiced yoghurt.
