Onunu (Mashed Yam and Plantain)

Onunu (Mashed Yam and Plantain) is a traditional Nigerian recipe for a classic accompaniment of boiled yam and plantain that's drained and pounded with red palm oil into a pliable paste/dough that's typically served with soups. This is another Nigerian ‘swallow’ an accompaniment to soups. Onunu is a tasty mouthwatering delicacy from Rivers State in the south-south part of Nigeria.

Ingredients:

3 Yam Slices
2 Plantains (Preferably Overripe)
120ml (1/2 Cup) Palm Oil
Salt to taste

Method:

Peel the yam, slice into pieces then wash and place in an empty pot. Add just enough to cover the yam slices, bring to a boil, reduce to a simmer then cover the pot and cook until the yam is soft (about 20 minutes). Drain the yam, transfer to a mortar and pound to a paste.

Just before pounding the yam, rinse the plantain whole then divide into two or three pieces (with the skin on). Place in a pot, add boiling water, then boil for about 10 minutes, until soft. Once the plantain is soft, remove the skin and add the plantain to the pounded yam in the mortar. Pound to mix the plantain and the yam together.

Season to taste with salt and palm oil then pound the mixture again until sleek and smooth. Your onunu is now ready; transfer to a bowl and serve to accompany a Light fish stew or Fresh fish pepper soup.
