Onions Stuffed with Meat and Mushrooms is a traditional Czech recipe for a classic dish of par-boiled onions stuffed with a mix of mushrooms and beef bound with egg and breadcrumbs and topped with cheese. Peel the onions and simmer in a pan of lightly-salted water for about 20 minutes, or until tender. Remove from the water with a slotted spoon and set aside until cooled. Once cold, carefully cut off the caps and gently scoop out the cores.
Melt the 50g butter in a pan then chop the scooped out onion cores and fry gently for about 6 minutes, or until translucent. Now add the mushrooms, black pepper, garlic and cooked meat. Fry for about 10 minutes, or until heated through then take off the heat and set aside to cool.
Once cold transfer the meat mixture to a bowl and mix with the egg. Add enough breadcrumbs to thicken the mixture then spoon into the hollowed out onions. Transfer to a lightly-greased baking pan and pour the stock over the onions. Sprinkle the cheese over the top then transfer to an oven pre-heated to 180°C and bake for 25 minutes. Serve hot.
