Ingredients:
1 x 250g butter
2 x 250g sugar
3 x 250g flour
4 eggs
280ml milk
2 tsp baking powder
1 tsp vanilla extract
Method:
Cream the butter with the vanilla and the sugar until light and fluffy then add the eggs one at a time, with 1 tbsp flour added with each egg to prevent curdling. Beat until creaming then add the four a third at a time, alternating with 140ml of the milk (ie: flour, milk, flour, milk, flour). Beat until well mixed then tip into a large, greased and lined springform cake tin.
Place in the centre of an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 20–25 minutes, or until a skewer placed in the centre of the cake comes out cleanly.
