Another Chilean classic this is effectively a crispy olive-based omelette that's a staple of street food.
Ingredients:
50 green olives, pitted and roughly chopped
2 tsp
capers, chopped
6 eggs
55g butter
salt to taste
Method:
Mix the olives and capers together in a bowl. Beat the eggs and season with salt. Tip the olives into the eggs and stir. Meanwhile melt the butter in a large frying pan and when the butter begins to brown pour in the egg mixture.
Cook over medium heat until the eggs have set and are golden brown on one side. Serve immediately.
