This is a classic sponge cake that develops a good crust when baked and is excellent served with jams and preserves.

Ingredients:

5 eggs, separated
caster sugar, equivalent to the weight of the eggs
flour, equivalent to the weight of 3 of the eggs, sifted
1 tbsp orange flower water

Method:

Reserve 5 tbsp of the sugar then add the remaining sugar to a bowl along with the egg yolks. Place the bowl in a pan of hot water taken off the hob and whisk until white and mousse-like then add the orange flower water, whisk to combine and take off the heat.

Whip the whites in a clean and dry bowl until stiff then beat in the reserved sugar before folding into the egg yolk mix along with the sifted flour. Immediately turn the mixture into a greased and sugared cake tin then place in an oven pre-heated to 160°C for about 50 minutes, or until a skewer inserted into the centre of the cake emerges cleanly. Turn onto a wire rack, dust with icing sugar then cool before serving.

Serve with jams or preserves.
