This is a firm, traditional, Victorian sponge cake that keeps well and is also excellent for icing.
Ingredients:
4 eggs
2 egg yolks
225g lump sugar (brown is best)
180ml water
225g plain flour
grated zest of 1 lemon (or orange flower water)
Method:
Break the eggs into a bowl and beat lightly. Combine the sugar and water in a pan, heat gently until the sugar dissolves then bring to a boil and continue boiling until the mixture reaches 110°C as measured by a confectioner's thermometer (the Soft Ball stage). Take off the heat, and when the sugar mix comes off the boil pour in a steady stream onto the beaten eggs, whisking briskly all the time. Now stir in the lemon zest then sift the flour into the bowl and carefully fold into the batter.
Immediately turn the mixture into a greased and lined cake tin then transfer to an oven pre-heated to 190°C and bake for about 1 hour, or until a skewer inserted into the centre of the cake emerges cleanly. Turn onto a wire rack and allow to cool before icing. Allow the icing to set and serve.
