Ohn Htamin (Burmese Coconut Rice) a Classic Myanmar recipe for an accompaniment of rice cooked in a coconut milk base with sugar, caraway leaves and onions.

Ingredients:

450g rice
1l water
250ml coconut milk
4 tbsp oil
2 tbsp sugar
2 tbsp salt
5 caraway leaves
8 small onions

Method:

Wash the rice thoroughly and drain. Combine the ingredients in a flame-proof casserole or large pan.

Bring to a boil, reduce to a simmer, cover with a sheet of foil then sit the lid securely on top. Cook gently over the lowest possible heat for 25 minutes, or until the rice is tender.

Take off the heat and set aside for 10 minutes to rest. Fluff the rice with a fork before serving.
