Oaten Honeycomb is a traditional Northern Irish recipe for a classic dessert of porridge flavoured with sugar, honey and orange zest which is mixed with egg yolks and whipped egg whites before being steamed in a pudding basin and served. The full recipe is presented here and I hope you enjoy this classic Northern Irish version of: Oaten Honeycomb.
Pour the milk into a heavy-bottomed saucepan, slowly bring to a boil then add the oats and stir to combine. Cook gently, stirring constantly, for 5 minutes. At the end of this time beat in the sugar, honey, butter, orange zest and cinnamon then take the mixture off the heat. Add the egg yolks and beat in to combine.
In the meantime, add the egg whites to a clean and dry bowl and beat until stiff then carefully fold into the oat mixture. Turn the resultant mix into a well greased 1.2l pudding basin. Cover with a pleated sheet of foil and secure tightly with string then place in the upper basket of a steamer and cook for about 2 hours, or until done through. Turn out onto a serving dish and serve with warmed honey and single cream.
