Nyaba is a traditional Sudanese recipe for a classic accompaniment of ground peanuts used to thicken a dish of greens cooked in chicken stock. The full recipe is presented here and I hope you enjoy this classic Sudanese version of: Nyaba.

Ingredients:
300g peanuts
2 bunches of ridgelar (these are traditional Sudanese greens, substitute a mix of watercress and spinach)
1 chicken stock cube
1 pinch salt
Method:
Place the peanuts in a blender and blend with 1 tbsp water to produce a runny peanut butter. Chop the greens and place in a pan of water along with the chicken stock cube. Bring to a boil and cook for about 30 minutes, or until almost all the water has evaporated.
Add the peanut butter and cook until just bubbling. Season with bring just to a boil before turning off the heat.
