Nougat d'Arachide (Peanut Nougat): A classic Togolese recipe for a nougat or sweet (candy) of a peanut butter toffee.
Ingredients:
8 tbsp caster sugar
2 tbsp water
4 tbsp peanut butter
2 tsp clear oil
Method:
Heat together the sugar and water in a small pan until the sugar dissolves. Bring to a boil and continue boiling until the sugar caramelizes. Add the peanut butter, reduce the heat to low and stir the mixture constantly for 1 minute.
Turn onto a wooden board and work in the oil. Spread the resultant mixture with a rolling pin then cut the paste into small squares or rounds. Allow to harden and store in an air-tight in.
