Ingredients:
1 generous handful of mixed nipplewort leaves and smooth sow thistle leaves
125g crème fraîche
salt and freshly-ground black pepper, to taste
Method:
Remove any tough stalks from the wild greens and discard any old or discoloured leaves. Chop the nipplewort and smooth sow thistle very finely then mix with the crème fraîche in a bowl.
Adjust the seasonings to taste then use as a spread for Breads. This goes particularly well with rye bread.
