Nimki is a Bengali/Bangladeshi folded flour cracker that is served as a snack with tea and which is also a typical part of traditional Diwali preparations.

Ingredients:

500g (3 1/3 cups) besan (toasted chickpea flour)
75g (3/8 cup) ghee
1 tsp salt
1 tsp cumin seeds
1 tsp ajowan (bishop’s weed) seeds
200ml (4/5 cup) water
Salt to taste
vegetable oil for deep frying

Method:

Mix together all the ingredients, except the oil. Add enough water to enable you to knead everything into a stiff dough.

Form walnut-sized balls then, working one at a time, roll out into thin discs. Cut each one in half and fold over twice into triangles.

Heat oil in a wok or deep pan. Once hot use to deep fry the triangles over medium heat until golden brown. Cool and store in an airtight container. They will last for up to 8 days.
