Nigerian Bushmeat Barbecue

The cane rat is one of Africa's largest rodents. It is an agricultural pest and is hunted for bush meat. Recently there have been efforts to farm it as mini livestock, particularly in Ghana and Nigeria.
This is one of the classic Nigerian ways of serving bush meat. I last had this in Lagos.
Ingredients:
1 bush chicken (any small chicken, like a bantam), halved
1
cane rat (grasscutter), quartered
1 bush pig (or a rack of pork ribs), cut into serving-sized pieces
60ml oil
60ml Guinness (in Nigeria it's partly made with sorghum and is sweeter than our standard Guinness; add a little brown sugar to normal guinness)
2 maggi cubes
Method:
In a mortar, pound together the oil, guinness and Maggi cubes until you have a smooth paste. Brush this over the meats and set aside to marinate.
Heat your barbecue, add the meats and grill for about 20 minutes per side, or until cooked through. Brush every now and again with the left-over marinade.
Pile onto a plate, arrange in the centre of the table and allow everyone to choose what they want.
Traditionally it's served with a drink made from a blend of palm wine and guinness.
