New Orleans Style Pumpkin Pie a Classic American recipe for a Thanksgiving dessert of spiced pumpkin custard with treacle (molasses) baked in a sweet shortcrust shell, prepared as it is in New Orleans and served topped with piped whipped cream.
Ingredients:
500ml milk
100g sugar
4 small eggs
275g pumpkin purée
120ml black treacle (molasses)
2 tbsp butter, melted and cooled
1/4 tsp salt
1/8 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp ground ginger
1/8 tsp ground allspice
1 unbaked
pie shell in a deep 25cm diameter flan tin with a fluted edge
chilled whipped cream, to garnish
Method:
In a medium bowl, beat together the milk, sugar and eggs until just blended.
In a second bowl, mix together the pumpkin, treacle, melted butter, salt and spices. Fold the egg custard mixture into the pumpkin mixture until well combined then pour into the prepared pie shell.
Transfer to an oven pre-heated to 170°C and bake for about 80 minutes, or until the crust is golden brown and the pumpkin filling is just firm.
Remove from the oven and allow the pie to cool on a wire rack before turning out of the tin.
This pumpkin pie can be served either slightly warm or cold, garnished with a dollop of whipped cream.
As a variant, you can add 2 tbsp bourbon to the filling mixture.
