Nasturtiums are a very versatile flower. Here, whole flowers are filled with a mix of cream cheese, cream and almonds and can be served as either a starter or a dessert.

Ingredients:

225g caster sugar
225g cream cheese
2 drops almond extract
75g blanched almonds, toasted and very finely chopped
120ml double cream
20 nasturtium flowers, gently washed and dried
icing sugar, to garnish

Method:

Combine the sugar, cream cheese and almond extract in a bowl then beat until thoroughly blended. In a separate bowl whisk the cream until quite stiff. Using a spatula fold this into the cream cheese mixture, along with the toasted almonds. Taste the resultant mixture then adjust the sugar and almond extract levels.

Take the flowers and stuff them with the cream cheese mixture. Arrange on a plate, then refrigerate for 2 hours to chill. Dust the flowers with a little icing sugar and serve with a fresh fruit coulis.
