Namak Paray
Namak Paray is a traditional Pakistani recipe for a classic snack of flour dough flavoured with salt, adjwain and cumin seeds that's deep fried to cook and is typically served with drinks. Namak paray are salty, crispy pieces of pastry flavoured with cumin seeds and ajwain seeds.
Ingredients:
500g Plain Flour
1 1/2 tsps Sea salt
1 tsp Ajwain Seeds
2 tsp Cumin Seeds
60ml Vegetable Oil
Water, as needed
Vegetable Oil, to deep-fry
Method:
Begin by preparing the dough: Sift the flour into a large bowl, then mix in the salt, ajwain, cumin seeds and oil. Stir until well combined then add just enough water to bring the ingredients together. Knead until you have a soft but not sticky dough.
Roll the dough into a ball and divide into two equal halves. Take the first piece of dough, turn out onto a floured work surface and roll out until quite thin. Cut into small strips then cut these strips crossways into diamond shapes.
Repeat this process with the remaining dough.
Heat oil in a deep fryer, or pour enough oil into a wok or deep pan to fry the dough pieces. Place over medium heat and when hot use to fry the dough in batches until golden brown. Half way through cooking flip then over with a slotted spoon or spider. Remove with a spider and drain on kitchen paper as your fry the next batch.
The namak paray will keep well in an air-tight container for several days. Typically they are served with drinks.
