Mutton Masala

This is a Sri Lankan curry, typically used in the preparation of mutton (goat meat) curries.
Ingredients:
500g mutton (goat meat) cut into pieces (preferably with bones)
125ml (1/2 cup) coconut oil or vegetable oil or ghee or butter
2 tbsp
curry powder
meat from 1/2 fresh coconut, grated and finely grounded
salt and chilli powder to taste
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 piece rampe (screwpine leaf)
6-8 few curry leaves
1 large onion, chopped
3 large onions minced finely
a few coriander leaves.
Method:
Place the meat in a pan with the chopped onion, salt, 250ml (1 cup) water and the rampe. Bring to a boil, reduce to a simmer, cover and cook for 40 minutes, until the meat is tender. Check after 20 minutes and top up the water as needed.
In a separate pan fry the minced onions in the oil until golden brown. Add the grated coconut and continue frying until a light brown. Now stir in the spices, curry powder, curry leaves and chilli powder. Cook until the curry leaves blacken then remove the meat with a slotted spoon and add to the pan.
Continue frying until the meat has browned all over then add the meat cooking liquid. Bring to a boil, reduce to a simmer and cook until the gravy thickens.
Serve hot with rice or flatbreads.
