Irish pub grub for Samhain (Hallowe’en) Murphy’s Guts is a playful and hearty dish, perfect for Halloween celebrations in Ireland. It’s simply sausages served with creamy mashed potatoes and a flavourful onion gravy. Despite its name, it’s a delicious and comforting meal.

Ingredients:

For the Sausages:
8 good-quality pork sausages
2 tbsp vegetable oil

For the Mashed Potatoes:
4 large russet potatoes, peeled and cut into chunks
4 tbsp unsalted butter
120ml whole milk
Salt and freshly-ground black black pepper to taste

For the Onion Gravy:
2 large onions, thinly sliced
2 tbsp butter
2 tbsp plain flour
500ml beef or vegetable stock
Salt and freshly-ground black black pepper to taste

Method:

For the Sausages: Heat the vegetable oil in a large frying pan over medium-high heat. Once the oil is hot add the sausages and cook, turning occasionally, until browned and cooked through (about 15-20 minutes).

Place the potato chunks in a large pan of salted water. Bring the water to a boil then simmer until the potatoes are tender (about 15-20 minutes).
Once tender, drain the potatoes then return them to the pan.

Mash the potatoes with the butter and milk until you achieve a smooth consistency. Season with salt and black pepper to taste.

For the Onion Gravy: In a separate pan, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they become soft and golden brown (about 10-15 minutes).

Sprinkle the flour over the onions and cook, stirring, for a few more minutes. Gradually add the stock while stirring to avoid lumps. Simmer the gravy until it thickens (about 5-10 minutes). Season to taste with salt and freshly-ground black pepper.

To Serve: Place a generous scoop of mashed potatoes on each plate then top with the sausages.

Pour the onion gravy over the sausages. Serve hot and enjoy your spooky and delicious Murphy’s Guts.
