Pomegranates and Christmas seem to go naturally together. Here pomegranate juice is used as the basis of an alcohol-free mulled drink. However, if you want an alcoholic version, you could add 200ml vermouth or Amaretto. For the juice you need 100% pomegranate juice or extract the juice from pomegranates. The easiest way to juice a pomegranate is by vigorously squeezing and pressing the skin of seven of the pomegranates to crush the seeds inside. Once done, hold the squashed fruit over a small saucepan, slit the skin with a knife and the juice will pour out (you will need 10-12 pomegranates).
Ingredients:
1l pomegranate juice
1 sprig rosemary
1 tsp sumac
1 cinnamon stick
1 tsp whole allspice
½ tsp coriander seeds
½ orange, sliced
¼ tsp orange blossom water
Method:
Pour the pomegranate juice into a large saucepan. Add the rosemary, sumac, cinnamon stick, coriander seeds, allspice berries and orange. If the mixture is a little tart to your taste stir in 2 tbsp runny honey.
Bring to a simmer then pour through a sieve into a jug. Stir in the orange blossom water and pour into heatproof glasses or cups.
If adding alcohol, do this before bringing the mixture to a simmer.
