Ingredients:
1l cider (a single varietal such as Thatchers' Katy or Cox's is good for this)
1 Cox's apple, cored and thinly sliced
1 star anise
2 cinnamon sticks, halved
6 whole cloves
4 tbsp heather honey
Method:
Pour the cider into a pan then stir in the honey before adding the cloves, cinnamon sticks and star anise. Heat gently until simmering and cook, without boiling, for 10 minutes.
Add the apple slices and heat gently for about 4 minutes more, or until the apple is tender. Ladle into mugs and drink warm.
