Ingredients:
1 small orange and 1 lemon, peeled
200g flour
100g sugar
2 eggs
120ml olive oil (or neutral oil)
1 sachet (11g) baking powder
Vanilla extract or rum (a dash)
Method:
Preheat oven to 180°C.
Add the orange and lemon to a food processor and pulse to chop.
Now add in all the remaining ingredients and process to a batter.
Divide between 12 prepared (greased and floured or lined) mini muffin wells.
Transfer to the centre of your pre-heated oven and bake for about 25 minutes, until the tops are golden and a skewer inserted into the centre of the muffin emerges cleanly.
Allow to cool for 10 minutes then turn out onto a wire rack to cool further.
