This is a really interesting French recipe for a modern-style curry using that traditional meat, mutton.

Ingredients:

800g Mutton (shoulder), cut into serving-sized pieces
2 Onions, finely sliced
2 garlic Cloves, slivered
1 red bell pepper, sliced
1 hot chilli, finely chopped
50g Raisins
2 tbsp Curry (use mild colombo curry powder or hotter Madras curry powder, depending on taste)
1 tin of Chopped Tomatoes
4 cayenne chillies, to garnish
2 tbsp Olive Oil
Salt and freshly-ground black Pepper, to taste

Method:

Heat the oil in a casserole dish (a cast iron casserole/Dutch oven is good) over medium-low heat and sweat the onions with the curry powder. Add the bell pepper and pieces of meat, browning the meat on all sides.

Season with salt and pepper, add the chopped tomatoes, add the garlic and chopped chilli, then pour in 300ml of water and bring to a boil.

Reduce the heat and simmer gently for 40 minutes. Stir in the raisins and cayenne chillies and continue cooking for 20 minutes.

Turn into a serving dish, removing the cayenne chilli, serve accompanied by rice and add a cayenne chilli to each serving.
