Here is a new twist on the Christmas pudding that I cam across recently. Lighter than a traditional pudding, this version can be cooked in the microwave on the day. Brilliant if you've forgotten the pudding on the big day!

Monterey Jack Cheese, Olive and Prawn Dip: An American recipe for a variant of the quick mincemeat-based christmas cake that requires no maturing, but which is also flavoured with chocolate, shown glazed and garnished with almonds.

Ingredients:

225g Monterey Jack cheese, grated
125g cooked prawns, drained
75g sliced black olives, drained
175ml mayonnaise
4 tbsp spring onions sliced into rings (white parts only)

Method:

Combine all the ingredients in a microwave-safe bowl.

Transfer to your microwave and cook on full power for 3 minutes.

Stir to mix then return to the microwave. Cook for 30 seconds more, then remove and stir again.

Return to the microwave and cook for 30 seconds more. Repeat until the dip is nicely heated through.

Serve hot, accompanied by tortilla chips and hot pepper sauce.
