Le molleux au chocolat (Chocolate Fudge Cake) is a traditional French recipe for a classic rich fudge cake made with flour and ground almonds. The full recipe is presented here and I hope you enjoy this classic French version of: Chocolate Fudge Cake (Le molleux au chocolat).
Chop the chocolate and butter into pieces, place in the top of a bain-marie (double boiler) set over hot (not boiling) water and stir until melted and thoroughly combined. Take off the heat and set aside to cool slightly.
In the meantime whisk together the eggs and sugar for about 10 minutes, or until thick and creamy (the whisk should leave a trail when removed from the mixture). Sift together the four and baking powder then incorporated into the egg mix along with the ground almonds and melted chocolate.
Pour the batter into an ungreased 23cm diameter springform cake tin. Transfer to an oven pre-heated to 150°C and bake for 50 minutes, or until the top is set and nicely browned. Remove from the oven and allow to cool completely in the tin before taking the cake out, slicing and serving.
