Mofo Akondro (Malagasy Banana Fritters)

Mofo Akondro (Banana Fritters) is a traditional Malagasy (from Madagascar) recipe for a classic snack of banana pieces that are coated in flour and rice flour batter before being deep fried. Ingredients:

250g plain flour
180g rice flour
200g sugar
360ml water
1 tsp baking powder
1 egg
pinch of salt
6 ripe bananas

Method:

Combine the flours, sugar, salt and baking powder in a bowl. Add the egg and water and beat to form a smooth batter.

Take each banana, peel and cut int half lengthways then cut each half in half crossways, so that you have 4 pieces per banana. Stir these gently into the batter then cover and set aside to rest for 60 minutes.

Heat oil to a depth of about 5cm in a wok or large pan. When the oil is hot, take the banana mixture. Remove a banana with a slotted spoon and allow a little excess batter to drain off. Place gently in the hot oil and fry for between 2 and 4 minutes, stirring occasionally, until evenly browned all over.

Drain on kitchen paper and serve either hot or at room temperature.
