Traditional Dublin coddle is made with bacon and cider. This is a more up to date version made with sausages, bacon and onions. In cooking terms, coddling is cooking gently in liquid that is beneath boiling point. Originally the Dublin coddle was a way of making use of old or over-salted bacon by cooking slowly to remove the excess salt.

Ingredients:

675g potatoes, sliced
500g thick pork sausages
4 rashers of bacon, rinds removed and sliced thickly
500g onions, sliced
salt and freshly-ground black pepper, to taste

Method:

Place the sausages and bacon in a large frying pan. Pour over just enough water to cover then bring to a boil, reduce to a simmer and cook for 5 minutes.

Drain the cooking liquid (reserve this) then add the sliced onions and potatoes. Season liberally then pour in sufficient of the reserved cooking liquid to cover the potatoes. Cover the pan with a tight-fitting lid, bring to a simmer and cook the coddle gently for about 1 hour, shaking the pan from time to time to prevent the contents from sticking.

Serve hot.
