The name of this cake is Swahili and it's also prepared in Kenya’s coastal region where the recipe is called 'Mkate wa Sinia', (literally 'bread prepared on a tray'). So this is a white cake traybake. Interestingly the basis for this cake is coconut and rice rather than wheat flour. This cake is typically served as a dessert.

Ingredients:

1 kg Suriname rice
3 coconuts, meats extracted and grated
1 vanilla pod (split longitudinally and scraped)
450g sugar
1 tsp Cardamom pods
100ml cooking oil
125ml coconut milk
½ tsp baking powder
1 tsp baking soda
1/2 tsp salt

Method:

Wash the rice then transfer to a large bowl. Cover with water and set aside to soak for three days, changing the water every evening.

On the fourth day drain the rice in a sieve and set aside to drain for 30 minutes.

After this time transfer the rice to a bowl land combine with the coconut milk and baking soda. Blend with a stick blander until mixture becomes thick.

In the meantime, pre-heat your oven to 180°C.

Add the cardamom pods and vanilla seeds to the rice mixture and blend again until everything is well mixed.

Add all the remaining ingredients and 50mll cooking oil to the rice and blend once again until everything is smooth and thoroughly combined.

Grease your baking tin with the remaining oil (this could be a traybake tin or a springform cake tin) then pour in the cake batter. Transfer to the centre of your pre-heated oven and bake for 25-30 minutes until the cake is nicely risen and golden (once baked, a skewer inserted into the centre of the cake emerges cleanly).

Transfer the cake to a wire rack and allow to cool in the tin for 30 minutes. Carefully turn the cake out of the tin and allow to cool completely before slicing and serving.
