This is a classic American recipe for a rich chocolate cake based on the traditional Mississippi Mud Pie.

Ingredients:

250g butter, chopped
150g dark chocolate (about 60% cocoa solids), chopped
440g caster sugar
250ml hot water
80ml coffee flavoured liqueur (eg Tia Maria)
2 tbsp dark espresso coffee
225g plain flour
35g self-raising flour
225g cocoa powder
2 eggs, lightly beaten

Method:

Combine the butter, chocolate, sugar, water and coffee in a saucepan. Place on low heat and cook, stirring with a wooden spoon, until the chocolate melts. Add the coffee liqueur, take the mix off the heat then tip into a large mixing bowl.

Set the mixture aside to cool for 15 minutes then whisk in the flours and cocoa powder. When combined add the eggs and beat in thoroughly. Turn the batter into a 20cm round cake tin that's been greased and lined with greaseproof paper.

Place the cake in an oven that's been pre-heated to 170°C and bake for about 90 minutes, or until a skewer inserted into the centre of the cake emerges cleanly. (If the top of the cake begins to brown too much cover with a sheet of kitchen foil and continue cooking until done.)

Allow the cake to cool in the tin for about 30 minutes before turning onto a wire rack and allowing it to cool completely. Store in an air-tight container, where it will keep for up to a week.
