Minted Peas

Minted Peas is a traditional British recipe for a classic accompaniment of peas boiled with mint that are finished with butter and mint leaves and which makes an excellent side dish for Christmas or Thanksgiving dinner. Ingredients:

650g garden peas (fresh or frozen)
4 sprigs of mint
30g butter
2 tbsp mint leaves, finely shredded
salt and freshly-ground black pepper, to taste

Method:

Place the peas in a saucepan then add just enough water to barely cover them. Add the sprigs of mint then bring to a boil. Reduce to a simmer and cook for 5 minutes (if the peas are fresh), or 2 minutes (if the peas are frozen).

As soon as the peas are tender, drain them and discard the sprigs of mint. Return the peas to the pan with the butter and shredded mint leaves. Stir until the butter has melted and season to taste with salt and black pepper.

Turn into a warmed dis hand serve immediately.
