Mint Shortbread Biscuits

Here is a modern Irish twist on the traditional shortbread biscuit, especially for St Patrick's day!

Ingredients:

200g butter, softened
200g granulated sugar
1 egg
320g plain flour
1/4 tsp salt
2 tsp mint extract
green food colouring, as needed
melted chocolate, to decorate

Method:

Cream together the butter and sugar in a large bowl until pale and fluffy. Add the egg, beating thoroughly to combine, then mix in the mint extract.

Sift together the flour and salt in a separate bowl, then stir into the cream ed mixture. Work in a few drops of green food colouring, adding enough to attain your desired colour of green. Mix well to combine, turn the mixture onto a sheet of clingfilm (plastic wrap) then roll into a log.

Firmly twist the ends to seal then refrigerate for at least 60 minutes.

After this time, remove from the refrigerator, remove the covering and slice into 6mm thick rounds.

Arrange these on lightly-greased baking trays then transfer to an oven pre-heated to 200�B0;C and bake for about 8 minutes, or until the biscuits are just cooked and lightly golden brown on their surface.

Once cooked, transfer to a wire rack. Allow to cool completely, then drizzle a little melted chocolate over the top (a mix of white and dark chocolate looks very pretty).

Allow the chocolate to cool and set before serving.
