Mini Pots of Gold

Here is a classic Irish biscuit (cookie) that makes a wonderful treat for Children and which is always a hit on St Patrick's day.

Ingredients:

For the Dough:
75g brown sugar
1/2 tsp vanilla extract
180g plain flour
1/2 tsp salt
150g butter, softened
4 tbsp unsweetened cocoa powder

For the Filling:
400g caramels
2 tbsp milk
4 tbsp Smarties (or other candy-coated chocolates such as M&Ms), yellow and orange only
1 tbsp yellow sugar

Method:

Begin with the sugar cookie dough: Cream the butter and brown sugar in a bowl until pale and fluffy. Stir in the vanilla extract then sift over the flour, cocoa powder and salt and blend thoroughly to combine.

Divide the resultant dough into 36 equal-sized pieces and shape these into balls.

Place one ball in the individual wells of a jam tart tin, pressing the dough into the base and up the sides (do not allow the dough to become too thin).

Transfer the tins to the refrigerator and chill for 15 minutes. After this time, transfer to an oven pre-heated to 170°C and bake for 9 minutes. After this time, remove from the oven and use the back of a spoon to gently press down on the centre of each biscuit (cookie).

Return to the oven and bake for 1 minute more.

Remove the biscuits from the oven and allow to cool in the pan for five minutes, then carefully turn out and transfer to a wire rack to cool completely.

In the meantime, combine the milk and caramels in a saucepan. Place over low heat and cook, stirring frequently, until smooth.

Spoon the caramel into the centres of the biscuits, and whilst the caramel mixture is still warm decorate with the caramel-coated chocolates and the yellow sugar.
