Here is a modern twist on the traditional Christmas mince pie... in essence, a seasonal Danish pastry.

Mincemeat Croissants: A British recipe for a twist on the traditional croissant, where the croissant dough is spread with mincemeat before serving — this is an excellent treat for Christmas morning.

Method:

Roll out the croissant dough and cut into 12 triangles. Place a small amount of mincemeat at the wider end of each triangle. Roll up the triangles so that the filling is encased within. Now curve the ends to make the classic croissant shape.

Sprinkle over the flaked almonds then lightly press into the dough.

Sit on a baking tray and transfer to an oven pre-heated to 200°C. Bake for between 12 and 15 minutes, or until the croissants have risen and are a pale golden brown all over. Remove from the oven then transfer to a serving plate.

Sprinkle over the icing sugar and serve immediately.

Like all croissants, these are best served warm on the day they're made (however, if they do go cold you can briefly re-heat in the microwave).
