Mincemeat Buns: A classic British Christmas bun or individual cake in paper cases made with mincemeat.

Ingredients:

375g (13 1/2 oz) mincemeat
250g (9 oz) currants
2 eggs
150g (5 oz) caster sugar
150g (5 oz) softened butter (or margarine)
250g (9 oz) self-raising flour

Method:

Combine all the ingredients in a large bowl and beat thoroughly to combine for about 2 minutes.

Line 32 jam tart tin wells or muffin wells with small paper cases and divide the batter between them. Transfer to an oven pre-heated to 160° (325°F, Gas Mark 3) and bake for between 25 and 30 minutes, or until golden brown and springy to the touch (a toothpick inserted into the centre should emerge cleanly).

Turn out onto a wire rack and allow to cool completely before serving.
