Mincemeat Blondies

Mincemeat Blondies is a modern Fusion recipe for a classic American-style baked blondie (a confection part way between a biscuit and a cake) that contains Christmas mincemeat and mixed spice as flavourings. A blondie is half way between a cake and a cookie. For me, the classic flavour of blondies comes from browning the butter beforehand, which gives the blondie a biscuity flavour. This version incorporates mincemeat and mixed spice, giving it a distinctive Christmasy flavour.

Ingredients:

115g (1 stick) Butter, melted and cooled
215g (1 cup + 1 tbsp [packed]) Light Brown Sugar
1 Egg
1 tsp Vanilla Extract
¼ tsp sea Salt
125g (1 cup) Plain Flour
1 tsp Mixed Spice (pumpkin pie spice)
100g (1/2 cup) Mincemeat
Finely-grated zest of 1 orange
3 tbsp hazelnuts, chopped
50g (1/4 cup) White Chocolate Chips (optional)

Method:

Preheat your oven to 180°C (160°C fan/ 350°F/ Gas Mark 4) and line an 20cm (8 in) square baking tin with non-stick baking paper.

Dice the butter, place in a saucepan then heat gently, stirring until it begins to darken and smell nutty. Take off the heat, turn into a bowl and set aside to cool. Now beat in the light brown sugar, egg and vanilla extract until everything is combined.

Stir in the salt, plain flour and mixed spice then fold in the mincemeat, orange zest, nuts and white chocolate chips (if using).

Spoon the mixture into the prepared tin, transfer to the centre of your oven and bake for 25 minutes. Leave to cool completely before cutting into squares and serving or storing. They will keep in an air-tight tin for a few days.
