Microwave Orange Zabaglione: A British recipe for an Italian-inspired dessert of a beaten egg and sherry dessert flavoured with oranges and served with sponge fingers or biscuits.

Method:

Combine the whole egg and egg yolk in a large bowl and whisk until creamy. Add the sugar and whisk again until the mixture attains a cream-like consistency.

Combine the sherry and orange juice in a large microwave-safe jug. Transfer to your microwave (1200W) and cook on FUL power for 70 seconds, or until just boiling.

Whilst whisking the sherry mixture constantly pour on the egg mixture. The mixture will thicken as you beat it.

Return to your microwave and cook on FULL power for 70 seconds. Now whisk, with an electric whisk for about 4 minutes, or until the mixture is thick and frothy.

Spoon into warmed glasses, garnish with the sponge fingers and serve immediately.
