Microwave Oaten Bramble Crumble: A British recipe for a crumble of blackberries and raspberries topped with a wheat and oat crumb mix that's adapted to be cooked quickly in a microwave.

Ingredients:

225g fresh (or frozen and thawed) blackberries, washed and hulled
225g fresh (or frozen and thawed) raspberries, washed and hulled (or substitute loganberries)
sugar, to taste
100g butter
175g plain flour
50g soft brown sugar
finely-grated zest of 1 lemon
25g porridge oats

Method:

Mix together the blackberries and raspberries in a microwave-safe dish. Sprinkle over sugar, to taste and set aside.

Sift the flour into a bowl, dice the butter, add to the flour then rub in with your fingertips until the mixture resembles fine crumbs. Stir in the brown sugar, oats and the lemon zest. Carefully spoon this mixture on top of the fruit.

Transfer the dish to your microwave (1200W) and cook on FULL power for about 9 minutes, or until thoroughly cooked through.

Place under a hot grill (or use the grill function on your microwave if you have one) and cook until the top is browned to your liking.

Serve hot, accompanied by vanilla custard or cream.
