Here is a microwave recipe that makes an excellent Valentine's dinner for two.
Ingredients:
2 large pork chops
1 tbsp runny honey
5 tbsp dry cider
2 tsp fresh sage, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Arrange the chops in a shallow dish and season liberally with salt and black pepper.
Mix together the honey and cider, pour over the chops, then sprinkle over the sage. Cover and set aside in the refrigerator to marinate for 40 minutes.
If you have an ordinary microwave, heat a browning dish inside for 5 minutes on FULL power then add the chops, turning the, quickly to brown on all sides. Cook the meat in your microwave (1200W) for 4 minutes, turning the meat half way through cooking and brushing liberally with any left-over marinade. During the second half of cooking, turn the bone ends of the chops to the centre of the dish.
If you have a microwave with a grill, pre-heat the grill, add the meat and cook on FULL power for 2 minutes. At the end of this time, turn the meat, pointing the bone ends of the chops towards the centre. Cook for 3 minutes more.
Now turn the meat over once more, spoon over any remaining marinade and cook on FULL power for about 90 seconds more or until the meat is thoroughly cooked and no longer pink in the centre.
Allow the meat to rest for 3 minutes, then serve immediately, accompanied by mixed vegetables or a crisp mixed salad.
