Microwave Barbecued Spareribs: A British recipe for a barbecue-style dish of pork spareribs in a tomato-based sauce that's adapted to be cooked quickly in a microwave.

Ingredients:

1.5kg meaty pork spareribs, cut into 7.5cm lengths
150ml tomato ketchup
1 small onion, peeled and chopped
2 tbsp lemon juice
4 tsp melted butter
1 small garlic clove, crushed
1 1/2 tsp sugar
salt and freshly-ground black pepper, to taste

Method:

Arrange the spareribs in a shallow dis. Mix together all the remaining ingredients and pour half over the meat. Turn to coat, cover with clingfilm (plastic wrap) and set aside to marinate for 20 minutes.

Now snip tow holes in the clingfilm cover to act as steam holes. Transfer to your microwave (1200W) and cook on full power for 5 minutes. Reduce the power level to LOW (this ensures that the spareribs are tender) and cook for 30 minutes.

Turn the ribs over and discard 175ml of the marinade mix. Pour over the remaining sauce mix, re-cover the dish with fresh clingfilm (plastic wrap), return to the microwave and cook on MEDIUM power for about 18 minutes, or until the meat is tender.

Remove from the microwave and set aside to rest for 10 minutes before serving.
