Microwave Baked Avocados: A British recipe for a starter of avocados stuffed with a mix of avocado flesh, brown breadcrumbs, onions, cream and butter that are cooked in the microwave to heat before garnishing and serving.

Ingredients:

2 large, ripe, avocados
lemon juice, for brushing
50g fresh brown breadcrumbs
2 tsp onions, finely grated
4 tbsp single cream
salt and freshly-ground black pepper, to taste
15g butter
sliced, stuffed olives to garnish
sliced gherkins, to garnish
sprigs of parsley to garnish

Method:


Slice the avocados in half lengthways then remove the stones and brush with lemon juice (this will prevent any discolouration). Scoop the flesh from the shell and coarsely mash in a bowl. Mix in the breadcrumbs, onion and cream then season to taste.

Stiff this mixture back into the avocado shells and dot the butter over the top. Sit the stuffed avocado shells on a microwave-safe plate, arranging them so that the pointed ends are oriented inwards. Place in your microwave (1200W) and cook on high power for 4 minutes.

Arrange on serving plates, garnish with the sliced olives, gherkins and parsley then serve.
