This is a classic dessert made from Mexico all the way down through Central and Southern America and into the Caribbean. This is the classic Mexican version of the dessert.
Ingredients:
600ml water
200g long-grain white rice
2 cinnamon sticks
¼ tsp sea salt
1l milk
200g granulated sugar
Optional toppings: ground cinnamon, chopped nuts, raisins
Method:
Combine the water, rice, cinnamon sticks, and salt in a large pot or cast iron casserole (Dutch oven) over medium-high heat. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes.
Stir in the milk and sugar. Return to a boil, reduce the heat to low, and continue cooking for 25-30 minutes, stirring often until thickened.
Serve warm or refrigerate for 2 hours and serve cold.
Garnish with ground cinnamon, chopped nuts, or raisins if desired.
