This recipe makes and excellent treat for Valentine's day, and it's also easy to make!
Ingredients:
200g sugar
1/2 tsp baking powder
1/8 tsp sea salt
3 egg whites
1 tsp vanilla extract
1 tsp vinegar
1 tsp water
fresh strawberries, sliced
Method:
Sift together the sugar, baking powder and salt into a bowl. In a separate bowl combine the vanilla, vinegar and water.
Add the egg whites to a clean and dry bowl and beat until stiff. Add the sugar mixture, 1/2 tsp at a time, to the egg whites, alternating with a few drops of the liquid and beating constantly. When all the ingredients are combined continue beating for several minutes more.
Drop the mixture by the heaped tablespoon onto a lightly-greased baking tray and use the back of the spoon to shape into shallow cups. When done, transfer to an oven pre-heated to 105°C and bake for about 50 minutes, or until dry and set.
Quickly remove the meringues from the baking tray and place on a wire rack to cool completely. Fill the cups with the sliced strawberries and serve.
