Mediterranean-style Sardines: Classic British recipe for a barbecue dish of whole sardines stuffed with thyme and marinated in lemon juice and olive oil that's cooked over a barbecue and served with lemon wedges, tomato slices and herbs.

Ingredients:

12 fresh sardines
12 sprigs of fresh thyme
4 tbsp olive oil
4 tbsp fresh lemon juice
salt and freshly-ground black pepper, to taste

lemon wedges, to garnish
tomato slices, to garnish
fresh herbs, to garnish

Method:

Clean, scale and gut the fish. Wash well, then pat the sardines dry with kitchen paper.

Tuck a sprig of fresh thyme into the body cavity of each sardine. Arrange the fish in a large, non-reactive, dish and season to taste with salt and black pepper.

In a small bowl, whisk together the lemon juice and oil. Pour this mixture over the sardines. Turn to coat, cover with clingfilm and set aside in the refrigerator to marinate for 30 minutes.

After this time, transfer the fish to a hinged barbecue fish basket. Place on your barbecue over hot coals and cook for about 3 minutes per side, basting frequently with any remaining marinade.

Serve immediately, garnished with lemon wedges, tomato slices and herbs.
