Maryland Chicken Kebabs: Classic American recipe for a barbecue dish of skewers with alternating piece of marinate chicken and bananas covered in bacon.

Ingredients:

8 chicken thighs, skinned and boned
1 tbsp white wine vinegar
1 tbsp lemon juice
1 tbsp golden syrup (corn syrup) or honey
6 tbsp olive oil
1 garlic clove, crushed
4 rashers of rindless smoked streaky bacon
2 bananas
salt and freshly-ground black pepper, to taste

Method:

Cut the chicken into bite-sized pieces. In a large bowl, mix together the vinegar, lemon juice, syrup (or honey), oil, garlic and seasonings. Add the chicken to this marinade and toss until thoroughly coated. Cover and set aside in the refrigerator to marinate for about 90 minutes.

Use the back of a knife to stretch the bacon rashers then cut each piece of bacon in half. Cut the bananas into 3cm lengths and brush them with a little lemon juice (this will prevent discolouration).

Wrap a piece of bacon around each piece of banana. Now remove the chicken from the marinade (reserve the marinade). Thread the chicken pieces, alternating with the banana, onto skewers.

Place the skewers on a barbecue over hot coals and cook for between 8 and 10 minutes, basting frequently with the left-over marinade, or until the chicken is thoroughly cooked through.

Serve with barbecued corn on the cob and mango chutney.
