Marinara Sauce

Ingredients:

120ml extra-virgin olive oil
2 onions, finely chopped
2 garlic cloves, finely chopped
2 celery sticks, finely chopped
2 carrots, peeled and finely chopped
1/2 tsp sea salt
1/2 tsp finely-ground black pepper
1.8kg tinned crushed or chopped tomatoes
200ml white wine
2 bay leaves

Method:

Heat the oil in a large flame-proof casserole then add the onions and garlic and fry until the onions are soft and translucent, about 8 minutes. Stir-in the celery and carrots then season with the salt and black pepper. Continue frying until the vegetables are soft (about 10 minutes further) then add the tomatoes, white wine and bay leaves. Bring the mixture to a boil then reduce to a gentle simmer and cook, uncovered, for about an hour, or until the sauce is nicely thickened.

Remove the bay leaves, then adjust the seasoning to taste. The sauce freezes well. It can also be made a day ahead and stored in the refrigerator until needed.
