Seasoning Pudding

Though this is a traditional Manx recipe, similar pudding was also formerly made in Yorkshire. In effect this is a savoury bread pudding incorporating oatmeal for texture and onions for flavour. It's served to accompany a main meal of roast or fried meat. It used to be a way of using-up stale bread.

Ingredients:

500g (1 lb) stale bread
5 eggs
225g (½ lb) suet
Salt and Cayenne pepper, to taste
Fresh Thyme, to taste (you can also use dried)
Milk
2 tbsp plain flour.
2 tbsp oatmeal
3 large onions, finely chopped
freshly-ground black pepper, to taste
dried Sage, crumbled
fresh or dried Marjoram, to taste

Method:

Break the bread into chunks, place in a large bowl, cover with water and set aside to soak over night.

The following day, squeeze out the excess water from the bread then transfer to a mixing bowl. Add in all the remaining ingredients (except the milk). Stir well to combine, then beat in enough milk to yield a thick batter.

Pour into a greased tin (or pudding basin) then transfer to an oven pre-heated to 160C and bake for 45 minutes.

Allow to cool for 10 minutes, unmould, slice and serve with roast pork, or goose.
