Queenies are the Manx name for Queen Scallops, the smaller scallops sold at fishmongers. This is a classic Manx way of preparing them, usually as a starters.
Ingredients:
450g (1 lb) Manx queenies (scallops)
4 rashers streaky bacon, cut into thin strips (about 30g (1oz))
2 tbsp butter
2 Garlic cloves, finely chopped or crushed
2 tbsp additional butter
freshly-ground black pepper to taste
Method:
Melt the butter in a frying pan over high heat. When the butter is foaming add the bacon and fry briskly until golden brown and crispy.
Add the scallop meats and garlic and cook over high heat for 30 seconds, shaking the pan occasionally.
Take of the heat, stir in the additional butter and season to taste with plenty of black pepper.
Serve immediately accompanied by rustic bread.
