These are Manx shortcakes made from oat meal blended with butter and lard and sweetened with a little sugar.
Ingredients:
500g (1 lb) fine oatmeal
115g (4 oz) butter
115g (4 oz) lard
225g (8 oz) sugar
1 tbsp baking powder
1/4 tsp salt
6 tbsp treacle (molasses)
Method:
Soften the butter and lard (but make sure they do not melt).
Mix the oat meal with the sugar, baling powder and salt, whisking until well combined. Add the treacle and mix in to bind the ingredients together.
Roll the mixture into little cakes. Transfer these to greased baking trays, making sure there's enough space between them so they can spread during baking.
Transfer to an oven pre-heated to 200C (400F) and bake for about 15 minutes, until cooked and beginning to colour around the edges.
Allow to cool on the baking tray for 10 minutes then transfer to a wire rack to cool completely before storing.
