Manx Butter Fudge

This is a classic Manx fudge made simply with butter and caster sugar. This makes a great treat for Hallowe'en or Christmas.

Ingredients:

225g butter
160g caster sugar

Method:

Combine the butter and sugar in a small heavy-based saucepan.

Place over medium heat until the butter has meted. Keep stirring until the sugar has dissolved.

Take off the heat and pour into a greased baking tray. Allow to cool then place in the refrigerator and chill for 30 minutes, until set.

Cut into cubes and store in the refrigerator.
