Mantecados are typically enjoyed during the winter and at Christmastime in Spain. They are named after manteca the fat or lard traditionally used to make them (though this version is adapted to use oil).

Ingredients:

350g plain flour, sifted
120ml oil
160g icing sugar
Grated zest of 1/2 lemon
Ground cinnamon

Method:

Sift the flour into a large bowl then form a well in the centre. Add the oil, sugar and lemon zest. Combine to mix then knead into a dough. Tear the dough into balls, flatten a little then arrange on a baking tray that has been greased and lightly floured.

Allow the biscuits to stand for 20 minutes then sprinkle the tops with cinnamon. Place in an oven pre-heated to 170°C (150°C/325°/Gas Mark 3) and bake for 20 minutes. Allow to cool completely before serving.
